Life is like a box of chocolates

There's lots to like about eggs. They're a natural phenomenon being so versatile.

I really enjoy the surprise factor when you crack a free range egg - you never know certain what the yolks will look like. It's influenced by what the chook has been eating. As the seasons change and the creatures in the soil go through their life cycles, and the plants go through theirs, the yolk changes too.

A few weeks ago egg yolks were mustard-yellow in colour. It didn't detract from their flavour - in fact a rather earthy almost truffle-like tone was evident. This week, they're back to a vibrant orange, with less truffle taste and more of the googy-egg factor.
